We just happened upon this article that appeared in the New York Times on September 4th 1896 . It is about cider production in France. The writer notes that in that year cider production exceeded wine production. The reason for this is in no small part related to the blight affecting the French grape crop at the time.

First up, a recipe for mulled cider. We hope it will come in handy during the ever encroaching winter.

This is a Québecois recipe. At fineciders.com we are sure that you will agree that people of this Canadian province know a thing or two about the cold; albeit less, perhaps, than the people of the Yukon.

Ingredients:

1 litre of cider
12 Jamaican allspice berries
250 ml of orange juice
2 tablespoons of honey
4 cinnamon sticks
1 entire nutmeg
1/2 teaspoon of orange peel
1 Small red apple, peeled and quartered


Put the cider, orange juice, honey, allspice, honey, cinnamon, nutmeg and orange peel in a pot and bring to boil. - lower the heat immediately and let it simmer for 10 minutes. Add the apple and simmer for another 3 minutes.

Remove the apples and and place them in cups before adding the hot cider.
